2 years ago a bartender at Frankie’s Ristorante in Tinley Park introduced me to an old Spanish 🇪🇸 liqueur called Licor 43. You know what it tasted like? Peeps! No kidding!

Traditionally meant to be drinked cold over ice, it is saccharine, smooth, and strong. Made of 43 ingredients (reflected in its name), such as coriander, botanicals, vanilla and so forth. All of which may point to the secret ingredients of Peeps.

Surprisingly I didn’t find any Easter cocktail or Peep cocktail recipes online that use Licor 43. You honestly don’t need anything but this one liqueur to mimic Peeps in adult beverage form. More people should know about it, right? So I’m putting it out there for people to stumble upon.

But what to name this cute built drink? A Built Peep is short and sweet, it’ll have to do for now. How does it sound to you?

The Steps To Make A Built Peep Cocktail

A “built” drink, in bartending terms, means a mixed drink that only requires you directly pour a liqueur or alcohol in a glass, over ice or without—nothing more, nothing less. This technique is simple and efficient, often used for drinks that don’t require shaking, stirring, or blending.

Key Characteristics of Built Drinks:

Direct: Ingredients are poured directly into the serving glass. Typically from the most concentrated to the least.
Minimal Preparation: No need for specialized tools, shaking, or straining. Some drinks may benefit from a gentle stir to combine ingredients, especially if they are layered. Garnishes are optional as well, unless they are used to enhance presentation and flavor.
Variety of Applications: Used for both simple highballs (like a Gin and Tonic) and more complex layered drinks (like a Tequila Sunrise).

Preparation: Chill Licor 43 Bottle (the longer the better), making sure that it is cold.
Combine: Pour Licor 43 over ice into the glass of your choice.
Garnish: Secure one Peep onto the rim of the glass. You’ll need to impale it halfway to secure its place. But don’t push too hard such that you cut it all the way through, or else it will not stick.
